The Dream Whiskey company, born in January 2019 from the dream of the decades-long scotch whiskey enthusiast and connoisseur Marco Maltagliati and his partner and communication expert in the food and wine field Federico Mazzieri, presented the second collection of the project. After the first composed of three exclusive labels and launched at the beginning of the year, it arrives Metamorphosis, a line that follows the philosophy of the previous one, with five single cask whiskies – each made from a single barrel – aged from a minimum of 13 to a maximum of 30 years, for a total of 1719 bottles.

 

 

All the spirits marketed by Dream Whiskey come from Scotland and, in order for them to be defined as Scotch whisky, the bottling and labeling are carried out in the land of origin, following the indications of the Italian company. “Before even dealing with the graphic, promotional and commercial aspect” said Sales Manager Marco Maltagliati “we select the whiskeys we want to bottle, based on our personal taste, and we purchase the entire barrel. We have a stone warehouse, in technical terms a dunnage, where we age our whiskeys in barrels. It is located in Speyside, an ideal area for the rest and evolution of this distillate, due to the strong temperature variations and humidity. There is no correct timing for all whiskies, but one for each one, and this is why we choose from time to time when the product is ready to be bottled".

 

 

Compared to the first collection, Metamorfosi contains two more labels and an evocative name, which explains the long and tortuous process of transformation of the raw material into distillate. “Whisky is born as a spirit, the barrel is its cocoon and here it interacts with time, space and territory. It takes on color, develops its aromas and creates its character." To the four single malt references bearing the names of the seasons, due to the contained hints that remind the two partners of the four periods of the year, 1990 is added, the first single grain presented by Dream Whisky, a rare type of whiskey to find exclusively, produced with wheat as the main base, rather than the barley of single malt, and aged - as the name suggests - 30 years.

 

 

The company was born with the intention of making Scotch whiskey known in a more emotional, easier and less didactic way, letting ourselves be carried away by our tastes, sensations and memories. Ten years ago it wasn't me who chose whiskey but the opposite. After a journey as a sommelier I tasted a Caol Ila12yo, a whiskey that struck me for the organoleptic pyramid it possessed". The inspiration pushed him to read up, to meet experts in the sector, above all Claudio Riva of Whiskey Club Italia, and to travel. “With Dream Whiskey we want to ensure that what happened to us can happen to all people who are not whiskey enthusiasts. This is why we have chosen to organize single-sensory tastings, building-themed activities, thematic trips for enthusiasts and professionals in the sector, and simple and effective, but at the same time non-trivial, communication." The labels, which are created by young Italian illustrators, do not focus on the producer shown on the back but, as mentioned previously, on the aromas contained within the whisky, an even more important parameter given that it is a single cask, because it is a product unique in the true meaning of the word.

 

 

“The contents of a barrel are unparalleled. Its aromas change depending on the wood used, the temperature and the year of bottling”. For those interested in knowing the Metamorfosi collection in detail, on the company website it is possible to purchase the five individual products and, from December 5th, also a kit consisting of five samples in 5 cl format. “For now, e-commerce remains the only way to purchase products, awaiting theopening of our Dream House in Milan, in the second half of December. It will be a shop focused on our products with an eye also towards other productions, not necessarily scotch whiskey but also other excellent spirits and spirits".

Note

An elegant and refined whisky. Hints of white fruit and flowers combine perfectly with notes of honey, giving a fresh and pleasant drink. The ending brings to mind a spring walk, immersed in the scent of orange blossom and sipping a lemon granita.

An important and complex whisky. Its evolution in the glass is a sensorial journey, sugar candies, ripe peaches and jasmine flowers make their debut to give way to a violet-scented cotton candy and the typical scent of time that only those who have visited the Scottish warehouses can recognise. A finale worthy of applause and free interpretation.

Note

A direct and unexpected whisky. A constant evolution brings to the attention vegetal scents such as green pepper and hay, marrying in perfect harmony with aromas of yellow rose and burnt wood. The particular Rossana candy flavor takes us back to our childhood with a time leap and delicate white flowers introduce a delicate and pleasant finish.

Note

A broad and refined whisky. Drinking takes time. The long evolution in the glass is a temporal journey that began 30 years ago, light hints of wild flowers leave the stage to damp earth and cocoa bean. It evolves with notes of fresh mint and violet. A great coherence between smell and taste, the custard is combined with notes of acacia honey, a continuous reference to incense and oriental perfumes gives elegance to this great distillate. The finish is long and persistent, there is no need to rush but extreme respect for time, the main ingredient of this whisky
