In the oldest part of Siracusa, on an island that tells of many influences through the centuries, is the charming old town of Ortigia. Just a few meters away from the Duomo, inside the eighteenth-century courtyard of historical Palazzo Borgia del Casale, 2012 saw the birth of a cocktail bar with Andrea Franzò as its manager. Barcollo aims to surprise not only with its atmosphere but also with drinks that stand out for their care in aesthetic, for the little touches added tableside, their innovative pairings, and the use of Sicilian ingredients. Next to a small selection of international classics, twelve signature cocktails make up a drink menu that varies twice a year. Raw materials are always the base, often also highlighted in homemade products like fruit vinegar or infusions. Many people come to Barcollo for happy hour – the advice is to enjoy it in the alfresco area – but there are just as many coming after dinner to taste spirits in their purest form.
