It was back in 2005 that here in the Trastevere district Luca Conzato and Riccardo Ronchi gave life to Freni e Frizioni. Today, over 15 years later, the bar housed in a former auto repair workshop space, with its underground style and vintage pieces of furniture, is a certainty for many locals. Riccardo Rossi curates the mixing offers with Cristian Bugiada and shows off with a carefully designed proposal to satisfy the combination of quality/quantity that’s vital for the context. The interiors are pretty intimate, but outside there’s a large alfresco area where to comfortably sit down and enjoy the balanced drink menu changing every six months. In the laboratory, there’s a bartender that takes care of all homemade preparations: syrups, cordials, distillations, and clarifications. The focus on homemade sodas is recent – grapefruit soda, among others, is used in mixing the Paloma - while drinks on tap have been a specialty for the last couple of years. There’s a lot of attention to the client and to the research on ingredients: in the past, Freni e Frizion has been a trailblazer in the use of agave-based spirits and Peruvian pisco. Riccardo’s favorite cocktail? Gin Tonic.
