Near Naples, three bartenders got together and opened a cocktail bar-shop where people come to enjoy contemporary cocktail mixing, discover local ingredients, and buy them. Bar manager Vincenzo Pagliara and his team use the same raw ingredients to design cocktails and ad-hoc food pairings. Fermentations and infusions highlight local produce and aromatic herbs, like lemons, verdelli, Pellechiella apricots, Giffoni hazelnuts, friarielli, Piennolo tomatoes, and Vesuvian absinthe. The menu features signature cocktails along with a selection of alcohol-free and low-alcohol drinks, together with kombucha and verjuice. “Laboratorio” – laboratory – points to the daily bubbling of ideas, while “folkloristic” calls back to the bar’s mood and the Neapolitan dialect used in cocktail names. The main characters in each glass are local products but also liqueurs, local spirits, and homemade distillates. The shop also offers the option to buy bottled cocktails.
