Absinthe takes center stage
In the Lambrate district in East Milan, Niccolò Caramiello and Stefano Rollo – bar manager and kitchen and service manager, respectively – gave life to their dream in January 2022. It’s a dream in the shape of a bar reserved for a (lucky) few intimate clients, split into two souls and full of modern furniture restored by a carpenter – like a wooden bench made of old blind slats or a bottle rack made by building site planks. The drink offer includes simple, minimal, and accessible twists on classics mixed using original homemade preparations like falernum, bitters, liqueurs, essences, and cordials. In contrast, the food offered revolves around a research tapas bar. The entire experience revolves around absinthe, served in purity – sweetened, diluted, and cooled bohemian-style – or in a drink list that focuses on classics revised through the use of this anise-flavored liqueur for every possible palate. An example? Absinthe Mule is a variation on the Moscow Mule with absinthe and almonds.
