Embalmed in time. Giuseppe Doria, Giuseppe Montanaro, and Fabio Tiberio’s latest dream in Bologna is set in the Sixties (like the Modugno song of the same name) almost at the entrance of Mercato delle Erbe. There’s a strong parallel between the opening date – June 2021 – and the one of positivity and good luck sixty years earlier. The selection of furnishing has been meticulous: from the still-working Espresso machine from 1961 to the ice cream counter that now holds the drinks’ iced glasses, to the Totocalcio bet slip from 1954 and the wood and steel counter dating back to when Volare first opened in 1957. The cocktails are in the hands of Giuseppe Doria and his team, curating a menu of signature cocktails with no more than four ingredients each - including a spirit/liqueur/soda, Martini, and classics. There’s ample space here for Rosolio, homemade and ubiquitous on the menu, and for “aperitivo,” a ritual born in the Sixties, and here receiving a tribute through drinks mixed using long-forgotten products. Volare has something for everyone: nostalgics of that bygone era and people who’d like to experience it.
