In Rome's Trastevere neighborhood, the members of Cocktail & Social CO.SO. are showcasing a unique venue, open only at night. The idea is to evoke the four stages of sleep—awake, light sleep, deep sleep, and REM—with corresponding settings and drink menus. The signature drinks aim to recreate the sensations the brain experiences during each stage. During the awake phase, when our brain relaxes, chamomile and passionflower are favored; during the REM phase, taurine, a stimulant similar to caffeine, is favored. Bar manager Lorenzo Falasca and head bartender Giuseppe Ardovini also mix signature drinks that can be ordered at any time: timeless, classic, and long drinks.
