The first of many
In June 2020, Simone Covan (general bar manager), Albert Dallago (project manager), and Simone Ulivi (food & beverage manager) developed an idea that has taken root in the hotels owned by Giulio Fratini. The first opening was at the Hotel Santa Maria Novella in Florence: a venue where attention to cocktails goes hand in hand with customer service. The outdoor terrace overlooking the eponymous basilica, one of the city's most important churches, and the classically furnished rooms, each with a distinct personality, provide the perfect backdrop for enjoying the signature cocktails. A distinctive feature of the offering is the close connection between two worlds—cuisine and mixology—thanks to the use of techniques that often involve gastronomic ingredients, such as fermentation, infusion, or redistillation. Great care is also taken in the presentation of the drinks, which are served in striking glasses, some of which are 3D-printed. The Best of Santa section, which includes the most popular cocktails since the project began, completes the menu of the venue, and all the other Santa Cocktail Clubs.
