Under one of Bologna's characteristic porticoes, a UNESCO World Heritage Site, not far from the Asinelli Tower, lies a street bar that makes laboratory research its true strength. Bar manager Vlad Tcaci's drinks are crafted and served quickly, thanks to pre-prepared batches. All the bartenders—Yuri Romagnoli, Alessandro Michelacci, Alex Gardellini, and Andrea Ferraro—divide their time between the bar and the dining room to best accommodate customer requests. The focus is on elaborate homemade beverages, such as fruit cordials, sour cherry lacto-fermented drinks, and fatwashing with homemade lard pesto. All spirits are showcased in the glass, with the most popular cocktail bases being gin and vodka. The menu also includes non-alcoholic and low-alcohol drinks, a drink made with all the week's leftovers, and specialty drinks, made with constantly changing ingredients. Finally, there's the option of ordering three cocktails of your choice from the drinks list in smaller portions. Once a week, the venue hosts an expert local bartender, while once a month, an international professional takes center stage behind the bar.
