Timeless. The place opened by Francesco in 1980 in Genoa's Nervi neighborhood is more relevant than ever. Now that his son and bar manager Angelo Combini has been at the helm for a few years, the mantra remains unchanged. The meticulous sourcing of spirits, of which there are hundreds, is unique, as some are no longer even in production, like Queen Elizabeth's favorite gin. The drinks list is also based on the same spirits, whose selections are divided precisely by the alcohol used. The menu also features a selection of signature drinks made using less common techniques, such as smoking in a smoke sphere. The glasses chosen, in this case, take on unique shapes to enhance the cocktail.
