In Rome's Prati neighborhood, known for its Art Nouveau style that developed around Via Cola di Rienzo and its luxury boutiques, Gianluca Melfa, along with Sirio Di Francesco and Ivano Gambacorta, has opened a second bar, following the one near Campo de' Fiori. The atmosphere shares its roots with the first opening: a blend of vintage and sophisticated. Since summer 2023, bar manager Mauro Fogante has chosen to incorporate culinary preparations into his cocktails and, in exchange, offer spirits, such as whisky, to be used in dishes. This fusion has led to the creation of unique drinks, including gin paired with mango chutney, or fried sage, which, along with samphire, enhances a sea-infused martini. While alcoholic cocktails are the result of techniques such as milkwashing, fatwashing, or low-temperature cooking, the choice for non-alcoholic drinks is to focus on a fresh and simpler drink, like a Collins revisited in this way.
