The fusion bar

The 4-star boutique Gallery Hotel Art, part of the Lungarno Collection, in Florence, houses a cutting-edge American bar, constantly evoking Japanese and South American influences. Bar manager Sacha Mecocci and head bartender Cosimo Pieraccioli are tasked with translating these inspirations into liquid creations, served in the unique room with oriental-inspired furnishings and on the outdoor terrace. The drinks list features classics and their twists, always crafted with a few select ingredients, with a focus on the aforementioned geographical regions, and presented with minimal service. The focus of the glass is on Japanese vodka, gin, whisky, and sake, South American agave spirits, as well as other alcoholic bases typical of the two regions, as well as aromatic herbs, spices, and citrus fruits, such as white soy sauce (shiro shoyu) or yuzu juice. Behind the cocktails is always high-quality research, leading to the creation of highly innovative homemade creations, such as ultrasonically processed vodka with horseradish root.
