From the kitchen to the cocktail

Since August 2021, the lounge at the 2-star Michelin restaurant Duomo in Ragusa Ibla has become a fully-fledged cocktail bar, with a dedicated entrance. The venue is divided into four modern areas: a first area with a bar, a gilded room with comfortable seating, a cellar stocked with wine labels, and a small terrace overlooking the garden and the Iblei Mountains. Bar manager Mattia Cilia, along with head bartender Alfredo Izzia, prepares expertly crafted classics, twists on classics, and signature creations of his own. While the latter remains based on an iconic mixology, the final result is far from the starting point, as homemade ingredients such as fermented beverages, including tea-based kombucha, and sous vide cooking techniques come into play in the glass. These techniques complete the circle of extensive research into the raw materials, a process that never ends, as the name "I Cantieri" (The Shipyards) demonstrates. The crossover between the two is constant: at the chef's tables, you can sample drinks paired with the dishes, and the cocktails, including non-alcoholic ones, showcase many culinary inspirations.
