Si trova all’interno del 4 stelle 25hours Hotel Piazza San Paolino, a Firenze, nel quartiere di Santa Maria Novella. Companion “dolce amaro bar” è un omaggio tedesco - come la nazionalità della catena - alla miscelazione tradizionale italiana, fatta di un’anima dolce e di una amara. Il design scelto è un concentrato di eleganza, dalle pareti azzurre ai dettagli giallo pastello, fino alle luci e ai divanetti rossi, senza tralasciare la bottigliera in stile londinese e la musica italiana in sottofondo. Al bar manager Federico Filippelli è affidato il compito di guidare la proposta di miscelazione, che riguarda anche il Courtyard bar, il quale gode anche di un giardino e i cui cocktail sono abbinati ai piatti del ristorante. La drink list è composta di soli signature, creati da zero o a partire da classici senza tempo. L’idea è quella di far scegliere il cocktail in base al gusto dolce o amaro, rispettivamente ricreato con l’utilizzo di vermouth o di bitter e amari italiani. A completare le creazioni, ci sono le altre basi alcoliche note - c’è spazio anche per low alcohol e analcolici - materie prime di qualità, stagionali e del territorio e le erbe aromatiche provenienti dal giardino.

Companion is located inside the 4-star 25hours Hotel Piazza San Paolino, in Florence, in the Santa Maria Novella district. This “bittersweet bar” is a tribute from Germany – the chain’s birthplace – to the bitter and sweet soul of traditional Italian mixing. The chosen design is pure elegance, from the light blue walls to the pastel yellow details, to the light and the red sofas – without forgetting the London-style bottle rack and the Italian music in the background. Bar manager Federico Filippelli is also in charge of the drink offering regarding the Courtyard Bar, which can enjoy a garden and whose cocktails match the restaurant’s dishes. The drink list includes only signatures created from scratch or starting from timeless classics. The idea is for the guests to choose their cocktail from a bitter or a sweet taste – through vermouth or Italian bitters and amaros, respectively. Rounding off the creations are all the other alcoholic bases – and low alcohol and alcohol-free cocktails as well – high-quality seasonal and local ingredients and the herbs from the garden.
