In una chiesa sconsacrata di fine ‘900, nel pieno centro di La Spezia, Marco Giovani ha deciso di aprire il suo cocktail bar, che nel 2023 compie il primo lustro. Nonostante il restyling effettuato, gli arredi rispettano lo stile dell’epoca, come testimoniato dalle arcate e dalle volte a sasso, una di queste situata dove un tempo vi era un piccolo altarino e adesso il banco bar. Particolarità caratteristica del luogo, che ha a disposizione anche un dehors, è la possibilità di acquistare tutti gli articoli vintage in esposizione, dai quadri ai manifesti, fino agli strumenti professionali del mestiere, come shaker e strainer. L’idea del titolare, che riveste anche i panni del bar manager, è quella di proporre una miscelazione divertente ed estrema al tempo stesso, che punta a stupire per il contenitore delle ricette liquide, oltre che per il contenuto. La drink list varia ogni sei mesi ed è composta da soli signature, pensati, elaborati e costruiti sempre intorno a un tema differente. Ampia è la lista di homemade utilizzati che vanno ad aggiungere un tocco in più (e non di contorno) alle scelte. Seicento sono le referenze di distillati, ben equilibrati nella drink list.

Marco Giovani has chosen to open his cocktail bar in a late ‘900s desecrated church right in the center of La Spezia, and in 2023 Eclettica will turn five years old. Despite the restyling, the furniture respects the style of the era, with elements like the arches and stone vaults, one of which used to contain a small altar and now hosts the bar counter. A peculiarity of Eclettica, which also has an alfresco area, is the option to buy all the vintage articles on display: from pictures to posters to tools of the bartending trade like shakers and strainers. The idea of the owner and bar manager is to offer fun and extreme cocktail mixing, aiming to amaze not only with the content of the drinks but with their container, too. The drink list changes every six months and includes only signatures designed and constructed around a different theme. The list of homemade ingredients is long and adds a final touch (not just a garnish) to the choices. Over 600 spirit labels find an excellent balance in the drink list.
