In the small Catania town of Nicolosi, not far from Mount Etna, Alfonso Monaco has established a local mixology hotspot. Bar manager Antonio Grasso and bartender Paolo La Spina concoct increasingly innovative drinks, the fruit of laboratory research that leads the staff to develop homemade creations such as beetroot soda, shortbread syrup, pomegranate molasses, and lavender essential oil. The wine list boasts 400 labels, including Scottish whiskies and gins, as well as lesser-known agave-based spirits such as sotol, raicilla, and bacanora. Besides being prominent on its own, these spirits are also used in mixology, particularly in the signature drinks list and the all-time classics, the bar's timeless icons. In the minimalist, industrial-style setting, guests can relax in elegant and comfortable velvet armchairs, admiring the bartenders at work behind the lava stone bar.
